Trip to Mexico
… no, we didn’t go nor are we actually going, but we pretended for dinner tonight
More on that in a bit.
Lunch today was a super salad:

This salad contained: lettuce (spinach and mixed), tomato, cucumber, red/green pepper, ground flax, pinch of unsweetened coconut, a few walnuts, blueberries…….. and I think that’s it ![]()
On top I drizzled some Kraft Light Balsamic dressing.

I definitely love having salads like this! You’ll probably see more in the future!
On the side I had the other half of my Peanut & Oat Trek bar from yesterday.

This is by far my favourite flavour of Trek.
Work went well today. It got really busy at one point but I kept my cool and got through it. Management is really great there and they always help out where they can! Our customers were great though so I really can’t complain too much, and tips are always a BONUS!
I think today was a record for how many conversations I had with people about where I was from. I always get asked “Are you American or Canadian?” hehe.. it comes up at least once with every table I serve. The people I work with always question me because I’m always chit chatting with my customers! Hey, I can’t help it if people are interested!
When I got off work I messaged Steve straight away and he started dinner. What a guy!! He always spoils me because I work quite a bit so he’s constantly helping out around the house and whatnot. He’s so great.
We went to Mexico for dinner tonight
Steve made us some nachos as a starter:
Tortilla chips with cheese, tomato and jalapeno (we like our spicy food!).

There is a glass of wine there to the left. We had a bit of rose wine with dinner.
I had about 1/4 of what Steve made. They were yummy.
Our main meal was fajitas. We used quorn pieces instead of chicken, simply because they’re cheaper and taste great.

In the fajita mix was: quorn pieces, peppers, mushroom, onion, tomato.
Steve also put some seasonings on it as well as chili flakes.
My portion:

I used soy yogurt instead of sour cream and under the fillings is also some salsa. I had two of these.
Well, I have not been out for a run yet tonight and it’s now almost 9pm. It doesn’t look likely that i’ll be going! Theres always tomorrow. I want to run at least 20 miles this week which I think is a reasonable goal.
I work 7 days this week though. My next day off is March 6th if I don’t have to work that day, but I won’t find that out until next weekend.
I also want to devote some time this week into writing about my weight loss and exercise.
I’m off to have a chamomile tea, hang out with Steve and watch the travel channel! Oh yes, I just said the travel channel. But to be fair, we’re trying to choose a Honeymoon destination!!
We’re thinking either The Maldives, Egypt or South Africa.
What would you choose?

People ALWAYS ask me that same question! I usually have them guess…it’s fun to see if they can get it right!
I’ve been wanting to try Quorn but it makes me a little nervous for some reason. If you says it’s tasty I’ll have to give it a go one of these days.

Wow, those all sound like amazing honeymoon locations. I would say Egypt just because it will be such a unique experience! Good luck with your very busy work schedule- I would go nuts without my weekends!
