Blogger Meet Up
I’ve been waiting to post about this until I got pictures from our meet up last week! Steve and I took a drive about an hour away to meet up with Ruby, her husband Rowan and their sweet daughter Amber! Amber is a week younger than Sophie which obviously means they are going to be BFF. I’ve known Ruby for about six years now, so while the title says “blogger meet up”.. we knew each other way before we were both blogging! Ruby and her family are originally from Holland but were visiting family here in England. It was the perfect opportunity to get together.

It was such a nice time.. we spent a few hours eating a yummy lunch and drinking wine. Although the weather was torrential downpours of rain I’d say it was still a fun visit. Steve and I would love to hang out with them again someday. Maybe we can make a trip over to Holland for that!
I didn’t get online yesterday to post our meal ideas for this week. Steve was off work yesterday so we hung out and blogging just didn’t happen.
Here’s our plan anyway!
Monday- quiche & salad
Tuesday- carvery at the pub (roast dinner here we come!)
Wednesday- glazed salmon, green beans and salt & vinegar potatoes
Thursday- chicken parm a la Bobbi
Friday- roasted vegetable salad over a bed of couscous (I had this for lunch yesterday at a pub and it was so delicious i’m going to recreate it!)
Last week i’d say my favourite recipe that I tried was the risotto. If you do one thing this week – make it! You won’t regret it. As you can see, I am still talking about it haha. I had never made risotto before and to be honest, was a bit nervous because I didn’t want to mess it up. I learned though that the key to perfect risotto is patience in stirring!! You can’t just let it sit like regular rice or even throw it in the microwave like the Uncle Bens Express. Risotto takes time but is so worth it. I can’t wait until the next time I make it.
